Never Never Triple Juniper Gin
Never Never Distilling Co. in Australia love juniper. So much so, in fact, that their Triple Juniper Gin has been infused with juniper berries in 3 different ways throughout the production of the gin. The three ways are as follows:
1. Juniper berries are placed in brandy, where it steeps for 24 hours.
2. Fresh juniper berries are added to the spirit from step 1, and it is then distilled in a pot still.
3. Even more juniper berries are added to the steam basket of the still at the end of the process.
Together, this creates an intense and complex flavor of juniper. So we can say with good words that Triple Juniper Gin is imbued with juniper in flavor and aroma. However, it's not just juniper berries in this gin. The Never Never folks also use Australian peppercorns, angelica, cinnamon, lemon, lime, licorice, orris and coriander to build the gin's amazing flavor profile.
Tasting notes:
Scent: Pine needle, brushed rosemary, lemon oil, earthy root fruits that extend to fragrant pepper.
Taste: First a bright citrus character. Bold and intense, prominent juniper, supported by earthy undertones and woody spice.
Finish: Luxurious and long with a rich creaminess that dries quickly.
Botanicals : Eight botanicals including coriander seed, angelica root, orris root, lemon peel, lime peel, licorice root, cinnamon, "Australian pepper". The very large amount of juniper berries can cause the liquid to become slightly "foggy".
